The Perfect Sunday


A warm Sunday, zucchini cakes and fresh strawberries. The perfect Sunday brunch.

Zucchini Cakes:
Mix grated zucchini and a little red onion. Add an egg or two (I used two), a tsp of baking powder and 4 or 5 tbsp of flour. Salt and pepper. Fry in a large skillet with half butter and half olive oil. Serve with sour cream or greek yogurt. So good!

    I'm still not completely sold on zucchini.

    Although! Didn't you make zucchini tacos or something not long ago? And you reveled in your trickery! They were great, too.
